Place 1/2 cup of chopped fresh cilantro,olive oil, 2 tbsp of minced garlic, juice from 2 limes (squeezed), 1/2 tablespoon of course kosher salt, 1/4 teaspoon of pepper, chopped yellow Onion, and chicken in instant pot. Cook on poultry setting (high pressure) for 15 minutes.
While chicken is cooking:
sliced green onions 1/4 cup chopped fresh cilantro , sour cream, 1/2 teaspoon grated lime rind, dash of resh lime juice, 1/4 teaspoon salt, and minced garlic clove. Mix until uniformly mixed.
Once chicken is cooked, shred, and serve on flour or corn tortillas with lettuce, shredded chese, and crema.
