Cut the top/bottoms off the onions, and peel. Then slice the onions into "Slivers" (root to top).
Put butter and garlic in large saucepan, and heat until butter is melted and slightly sizzling.
saute the onions in the butter & garlic until carmelized
sprinkle in flour, and stir until it is mixed in and consistent
preheat oven to 500 degrees (Broil)
pour beef stock (broth) into onions, and stir well. Bring to a boil, then cover, reduce heat, and simmer for 20 minutes
cut baguette into 1/2" thick slices
pour broth and onions into a oven-safe dish (or individual bowls). Put baguette slices in soup (place them in the soup, then either submerge them with a fork, or flip them once they've absorbed some of the soup)
coat dish(es) with mozzarella cheese. Place in oven until cheese is melted and bubbly, then serve.
