The best way to cook steaks and pork chops, for texture and keeping flavor.
approximately 15 minutes prior to cooking, take meat out of refridgerator, and allow to come up to room temperature
season meat - for steaks, i prefer Montreal seasoning applied liberally. Salt and pepper may be more appropriate for pork chops.
preheat oven to 425 degrees F
once the oven is preheated, heat cast iron skillet on stove (medium)
melt butter into skillet
place meat (seasoned side down) in skillet, and cook for 2 to 3 minutes over medium heat - until browned
season the top half of the meat, if not done already
add remaining 1-2 tbsp butter to pan, allow to melt as flipping the steak (run the steak across the melted butter)
place skillet directly in the oven, and allow to cook until meat reaches the desired internal temperature (160 is usually deemed safe)
once cooking is complete, remove skillet from oven, and place on the stovetop (burners turned off!) for 2-3 minutes to rest
plate the meat, and then spoon the butter / seasoning mixture from the skillet over the meat, and serve
